Let me say, this process is a commitment, so if you're ready for the challenge, let's do it.
You'll need a jar, a kitchen scale, rye flour, and all purpose flour.
To start off, combine 100 grams of rye flour and 125 grams of water.
Mix it together, cover it, and place it in a warm place out of direct sunlight for 24 hours.
From days two through four, you need to scoop 75 grams of your mixture into a fresh jar and add 50 grams of rye flour, 50 grams of all purpose flour, and 115 grams of water.
Stir that up, and let it do its thing.
On days five through seven, you need to feed your starter twice a day instead of once.
Then on day seven, if the sourdough gods are with you, you should have a flavorful sourdough starter ready to use in all your baking adventures, from biscuits, to crackers, to breads.
