Marshmallow whip lives somewhere between whipped cream and mousse, giving it the classic vanilla candy-like taste from childhood.
And yes, you can buy it off the shelf, but I'm going to show you how to make your own.
Combine egg whites and cream of tartar, and mix until foamy.
Add sugar, and beat until soft peaks form.
Meanwhile, in a sauce pan, combine water, corn syrup, and the remaining sugar.
Cook until the mixture comes to 250 degrees on a candy thermometer, and remove from the heat.
With your mixer on medium, slowly pour your sugar mixture into the beaten egg whites.
Beat on high for five minutes.
Add vanilla extract, and then you have an amazing creamy marshmallow whip that you can serve with anything your heart desires.
